How to Prepare

  1. In a large bowl, sift flour. Add in the butter and rub in lightly with your fingertips.

  3. Pour the mix into the flour and mix the dough. Knead lightly and form a round of 2cm thick.

  • Saffron
  • Fish reduction
  • Cream
  • White wine
  • Onion
  • Garlic
  • Thyme
  • Hard butter

How to Prepare the Seafood

  1. Sauté the onion and garlic.
  2. Add the lobster meat and cook for a few minutes. Then add white wine and fish stock, allowing it to reduce. Add the cream. Remove the meat from the pan and fill into the shell.
  3. Beat the egg white and pour it over the lobster meat. Sprinkle Parmesan cheese over it and place in the oven for a few minutes.
  4. Poach the salmon with the lemon tea flavoured fish stock. Add cut vegetables and white wine in a pan and season.
  5. Pan sear the scallions and grill the mussels separately.
